Happy Monday everyone! It definitely feels like Monday to me. The weather here is so gloomy and record breaking cold for a late June day. I don't know about you, but this type of weather always makes me so tired and grumpy! It is a nap, pajama pants and warm cookies kind of day.

Speaking of cookies, you guys are going to love these! It's a peanut butter cookie, oatmeal cookie and chocolate chip cookie all rolled into one. The only thing that would make these better are some peanut butter M&M's. But I guess that would make them monster cookies. Okay, these are basically just monster cookies without the M&M's. But they are delicious and warm and soft! Not as chewy as my monster cookie recipe.



Before I get to the recipe, I wanted to share a simple quick tip I learned a few years ago. If you bake with peanut butter as much as I do, you will appreciate this. When you measure your peanut butter, spray a little bit of cooking spray inside the measuring cup. The peanut butter will plop right out! This may not be anything new or revolutionary to you, but it was to me! I couldn't believe I hadn't thought about that before.

Ingredients

1/2 cup butter or margarine
1/2 cup white sugar
1/3 cup brown sugar
1/2 cup peanut butter + 2 tablespoons
1/2 teaspoon vanilla extract
1 egg
2 tablespoons milk
1 and 1/3 cup all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup rolled oats
1 cup semi sweet chocolate chips

Instructions

Preheat oven to 350 degrees

In the bowl of your stand mixer, cream the butter, white sugar and brown sugar until smooth. Mix in the peanut butter, vanilla, egg and milk.

In a separate bowl, mix together the flour, baking soda and salt. Add to the wet ingredients. Mix, scraping down the sides as you go.

Mix in the oats and chocolate chips.

Drop onto greased cookie sheets, studding the tops with more chocolate chips if desired. Bake in preheated oven for 10 minutes. You don't want to overcook them, they will continue cooking a bit on the cookie sheet.

After a few minutes transfer them to a wire rack to cool completely....if there's any left by the time they cool. :)
