Chocolate Chip Cookie Cake

Happy Tuesday! I hope you all had a good weekend and are over the Monday slump :) I wanted to share a fun dessert with you guys that I made this weekend.


Chocolate Chip Cookie Cake Pie


Do you sometimes want a cookie, but don't want to go through the effort of making them? Enter Cookie Cake! This chewy delight is so simple and quick to make. I found the recipe over at Sally's Baking Addiction (love her!) years ago. I've made this so many times. It's definitely a favorite at my house.

You start off just like a regular cookie dough. Mixing the wet ingredients, the dry ingredients and then combining. Then, instead of rolling it into cookies, just put it all into a pie dish and bake it! It's like having one super sized cookie! That you cut into 8 slices....or just eat it all yourself and suffer the consequences! I think that would be too much dessert for even me.



A couple things make this recipe stand out. It calls for one egg and one egg yolk. The extra egg yolk is essential for a chewy cookie cake. To get just the yolk, simply crack the egg and transfer the contents back and forth between both ends of the shell until only the yolk remains. Easy peasy!




The other thing is using cornstarch in your dry ingredients. It makes an amazingly soft cookie. Or in this case, cookie cake :) 



Spread it into the pan, pop it in the oven and you're done!

Ingredients:


3/4 cup butter or margarine, softened

1 cup packed brown sugar (I like to use dark)

1 large egg + 1 egg yolk

2 teaspoons vanilla

2 cups flour

2 teaspoons cornstarch

1 teaspoon baking soda

1/2 teaspoon salt

1 and 1/2 cup semi-sweet chocolate chips


Instructions:

Preheat oven to 350. Spray 9 inch pie dish with nonstick spray.

In the bowl of your stand mixer, beat the butter until smooth. Add the brown sugar and beat again. Mix in egg, egg yolk, and vanilla until combined.

Mix in 1 and 1/2 cups chocolate chips.

Transfer the cookie dough into the prepared pan and press down. You can use a spatula sprayed with cooking spray if needed. 

Bake in preheated oven for 20-25 minutes or until lightly browned and no longer doughy in the center.

In a medium bowl, combine flour, cornstarch, baking soda and salt.
